A delicious, vegan dish. Colourful on your plate, light in your stomach, and tasty on your tongue. I won't tell you more! Just try cooking it and please write to me how you liked it. Tikiwe-Taschen aus Kork wishes you a delicious Christmas and a tasteful start to the new year!
It requires a bit of chopping, but you'll use minimal dishes. The taste is worth the chopping, I promise!
Ingredient List for 4 Servings:
Here's how to make it:
First, dice the tofu, vegetables, and pineapple. Cut the onions into rings and finely chop or press the garlic through your garlic press.
Now, fry the diced tofu in oil until golden brown on all sides. Then, glaze it with agave syrup until it's beautifully shiny. Remove it from the pan; its big moment is yet to come.
Next, sauté the onion rings and garlic until translucent and set them aside with the waiting tofu.
Now it's the bell pepper cubes' turn. I fry them until al dente. You fry them however you like them best. They also join the waiting tofu and onions.
The pineapple is also fried until golden brown.
In the meantime, wash the rice and cook it with a little salt in vinegared water.
It's time for the snow peas and mung beans to get a light browning.
Once they have reached the desired degree of browning, deglaze them with the 5 tbsp of white balsamic vinegar. Add the tomato paste, Sambal Oelek, parsley, and instant vegetable powder, and mix well. Once everything is well combined, stir in the bell peppers, pineapple, onions with garlic, and tofu. Just season to taste, and it's done.
The rice should be ready by now. Serve, and a delicious meal is ready to be enjoyed.
