Ugh, I used to love eating it! But what it meant for the bees, that wasn't clear to me then.
Yes, the small hobby beekeeper next door is certainly not the problem. But - as always - mass production is.
And dandelions? How I love that very special yellow in the rich green of the meadow! And then, suddenly, I get lectured again because it's a sign of over-fertilization. No, I can't save the whole world. But with this recipe for delicious, vegan honey made from dandelions, we can create a small, ecologically sound joy for ourselves.

And here's how it works: On a dry, sunny late morning to early afternoon, collect about 400 dandelion heads. We don't need the stems. Let the collected heads stand for at least 1 hour to allow any creatures you collected along the way to escape. Please protect yourself from ticks and collect from the middle of the meadow if possible, so you don't collect the DNA of all the neighborhood dogs ;-p
After the creatures have left the heads, cook the dandelion heads together with the lemon and orange slices for about 20-30 minutes. Washing beforehand is not ideal, as the pollen contributes to the taste. Germs are killed by cooking. Therefore, you don't need to wash the heads separately. Then let this liquid infuse, covered, for 24 hours.
After infusing, filter the liquid first through a sieve and then again through a clean towel. Now, boil the liquid with the sugar and the vanilla bean pulp, stirring constantly, for 1 hour. Please stay with it, as it will bubble and foam a lot!
After boiling, pour your finished honey into the sterilized jars and let it cool.
You can adjust the taste to your preferences. To the liquid that you let infuse for 24 hours, you can add rosemary, ginger, cinnamon, apple, or other ingredients. I added 3 tablespoons of cinnamon to my liquid. The next batch is planned with rosemary, and the one after that with ginger.

approx. 400 dandelion heads without stems
1 liter water
1 organic lemon
1 organic orange
1 kg sugar
1 vanilla bean
1 clean kitchen towel and 1 sieve
5 sterilized jars
