
Elderflower syrup = Summer

On a hot day in the garden or by the lake, a glass full of ice cubes and elderflower syrup with water or wine in hand. If the company is right, the day is perfect, isn't it?
So that you can experience this perfect day, I have an equally perfect recipe for you:
You need:
approx. 40 elderflower umbels
2 organic oranges with edible peel
2 organic lemons with edible peel
2l water
2.5 kg sugar
50g citric acid
1/2 tsp cinnamon
Remove leaves and stems from the elderflower umbels and let them sit for about 1 hour. The critters will use this hour to escape. Do not wash under any circumstances. The pollen carries most of the flavor, so we need it. Wash the oranges and lemons and slice them. Put the water, sugar, and cinnamon in a bowl and dissolve the sugar. Then add the elderflower umbels and citrus slices and let the mixture sit for at least 24 hours. It can also be longer. The mixture needs to be in the dark. Stir occasionally and enjoy the aroma. After 3 days at the latest, strain the syrup through a sieve and then through a clean kitchen towel. Boil the mixture once and then pour it into sterilized jars. For this, a jar is boiled with the lid on for about 10 minutes to be truly germ-free. This way, you'll always have elderflower syrup throughout the summer. You can freeze the leftover fruit slices and use them later for baking.
