A dear colleague introduced me to spaghetti squash. Sensational and delicious! A welcome change from the usual Hokkaido and butternut squash!
With its subtle aroma, spaghetti squash wonderfully complements its filling. It is open to many flavors and fillings. I am presenting this squash with a spinach and feta filling. Naturally vegan. I look forward to your creations and experiences in the comments.

Preheat the oven to 200°C (390°F) top/bottom heat.
Halve the squash. Caution: the skin is very hard! If necessary, place the squash in the hot oven for 2-3 minutes, let it cool down a bit, then it should be easier. Once you've managed it, carefully remove the seeds. Now, oil your squash halves and place them in the oven, skin-side up, for about 30-45 minutes. The larger the squash, the longer it will take.
In the meantime, wash the spinach, squeeze it well, chop the onion and garlic, and sauté until translucent. Cut the tomato into small cubes, as well as the vegan feta cheese and the spring onions into small rings. Mix everything together and season with nutmeg, pepper, and salt.
By now, your squash should be soft inside. Take the two halves out of the oven and scrape out some of the flesh. It looks a bit like spaghetti, which gave the squash its name. But leave a good rim. Now mix the scraped-out flesh with the spinach mixture and fill it back into the squash. If desired, sprinkle some vegan "grated cheese" on top and bake for another 15-20 minutes.
Now it's finally ready to enjoy. Simply spoon or scrape it out and savor the taste.
